This grilled halibut steaks features the mild, meaty fish on an earthy, turfy, subtly sweet chanterelle mushroom and corn base.& I4 _) u- n W& B3 H" e' V

) c8 O8 l1 j2 c3 m0 S2 d5 k6 D * 2 big halibut steaks$ b5 i+ n( D* K8 G+ n
* 2 tbsp olive oil
" q* P* p* A1 I: h: u * 1 tbsp butter
1 `+ U4 k3 z9 v' ~" G) p) v * 2 cups sliced chanterelle mushrooms
$ S) g" s" _+ y( q1 v% J' L * 1/3 cup diced roasted red pepper
* m; E# k- k7 T8 u4 { * 1 cup fresh corn kernels
3 P" M4 b$ Z' r& _' B * 1/2 cup water- \& d P9 X& F
* 1 lemon, juiced

* 1 tbsp minced fresh tarragon
: ^1 T+ p) F3 P5 D * micro greens for garnish

Instructions - `8 B! A; L- x, }9 c: l# Q
Step 1
8 O; M/ p. P. JSlice the chanterelle mushrooms into nice big and thick slices. Add 2 tbsp olive oil in a saute pan over medium heat. Add the mushroom slices and a pinch of salt in the pan. Give it a stir. Cook for 10 minutes or until the mushroom slices are lightly browned.

6 \( X# Q5 @" ~+ ~ {9 c* Z/ F8 IAdd 1 cup fresh corn kernels,0 h3 ?# l& p- M4 P# W" ~& H3 A
and 1/3 cup diced roasted red pepper or 1/2 red bell pepper, and 1/2 cup water in the pan. Bring it to a simmer, and simmer for 5 minutes. Add 1 tbsp butter and the juice of 1 lemon. Give it a mix. Turn the heat to low.

Season the 2 big halibut steaks with salt and pepper. Grill for 4 minutes per side.$ H& d7 _$ ]' P7 r. K, h$ G

& J8 [' }9 B9 j& l E" j( HTransfer the mushroom and corn mixture to a serving plate. Spoon over the sauce. Add 1 tbsp minced fresh tarragon.
